1 teaspoon baking soda

3/4 cup (1 1/2 sticks) butter, melted and cooled slightly

1 cup firmly packed brown sugar

1 cup mashed really ripe bananas (2 to 3 medium)

1 large egg

1 teaspoon vanilla

2 1/2 cups old-fashioned rolled oats (not instant)

1 cup chopped nuts, optional

In a medium size bowl whisk the flour, baking soda, salt, and nutmeg until well blended and set aside.

In a large bowl, beat the butter and sugar with an electric mixer on medium speed until well blended. Beat in the mashed bananas, egg, and vanilla, stopping to scrape down the sides of the bowl with a rubber spatula if necessary to make sure everything is well blended.

Stir in the flour mixture with the mixer on low speed or with a wooden spoon just until combined. Stir in the oats and nuts (if using) just until combined.

Ingredients

Flour to dust loaf pan
1 1/4 cups All-purpose Flour
1/4 cup Unsweetened Cocoa Powder
1/2 teaspoon Salt
1 cup Butter, softened (2 sticks)
1 cup Castor Sugar
4 Eggs
2 teaspoons Vanilla Essence
1/2 cup Chocolate Chips

Method

Lightly grease bottom and sides of 8 1/2 x 4 1/2 x 2 1/2 or 9 x 5 x 3-inch loaf pan. Dust with flour and shake out excess flour. Set aside. With a sifter or mesh strainer, sift flour together with cocoa powder and salt into. Set aside first for later use.

In large mixer bowl, beat together at medium speed the butter and sugar until light and fluffy, about 3 to 5 minutes. Beat in eggs, one at a time, followed by vanilla essence until thoroughly blended, at least several minutes. At low speed, gradually beat in the sifted flour mixture, 1/2 cup at a time, beating just until blended with no streaks remain. Stir in chocolate chips. Spread batter evenly in prepared greased pan.

Bake in preheated oven at 325°F until cake begins to pull away from sides of pan and cake tester inserted near centre comes out clean, about an hour. If tester shows dark brown, you've hit a melted chocolate chip.

 Test again in another spot near the centre of the cake. To prevent over baking, remove cake from oven as soon as no light brown batter shows on tester. Cool on wire rack for 10 minutes. With narrow spatula or knife, gently loosen cake from pan. Gently transfer cake onto wire rack. Cool completely. To retain moisture, keep cooled cake in plastic wrap. You may enjoy it plain or topped with fruit, ice cream or whipped cream, if desired.

Income Tax Update for 2009

The Canada employment credit increases from $1019.00 TO $1044.00. This credit is available to all tax payers that have employment income. This is a non-refundable credit equal to the amount of the claim times the lowest tax rate. Personal amounts and other Non - refundable Tax Credits are indexed to inflation so that most credits are increased by 2.5%.

The Basic personal amount and spouse or common-law partner amount were increased from $9,600.00 to $10,320.00. The Federal Tax brackets have been increased so that you can make more and pay less in 2009 than 2008. The lowest bracket on which 15% tax is paid was increased from $37,885 to $40,726, and 22% payable on $40,726 to $81,452, 26% on $81,452 to $126,264 and 29% on income in excess of $126,264.

Canada Child Tax Benefit - The net income level at which the Child Tax Benefit, and Disability Benefit Supplement begins to be phased out was increased to$40,726 for the July 2009 to June 2010 benefit year. Because the amount of the benefit is based on income, taxpayers must file returns in order to receive it. If a person is married or living common law, both spouses must file returns. The basic Canada Child Tax Benefit for July 2009 to June 2010 is $1,340 for each child plus an additional $93.00 for the taxpayers third and each additional child. These payments are not included in income and are thus not taxable.

Universal Child Care Benefit - This is a benefit of $100.00 per month for each child under the age of 6 years and is paid for the purpose of reducing child care costs. This is a taxable benefit and must be reported by the Spouse or Common law partner with the lower net income.

Employment Insurance Clawback - The net income threshold at which EI benefits must be paid back is increased from $51,375 to $52,875. An exception is made for first time claimants who are defined as having received less than one week of EI Benefits in the last 10 years. The clawback is equal to the lesser of 30% of regular benefits and 30% of net income in excess of $52,875.

Home Buyers Plan- The maximum that first time home buyers can withdraw from their RRSP under the Home Buyers Plan has been increased from $20,000 to $25,000. The change applies to withdrawals made after Jan 27 2009. The maximum repayment period remains at 15 years.

First Time Home Buyers Tax Credit- New for 2009 for first time home buyers on homes with a closing date after Jan 27 2009 a personal amount of $5,000 may be claimed. This is a non-refundable tax credit and therefore results in (5000 x 15%) a tax credit of $750.00.

Age Amount- This credit was increase by an additional amount of $1000 above the inflation indexed amount and is $6,408 for 2009. Repayment of Old Age Security Benefits- The net income threshold at which the tax payer becomes subject to the clawback is increased from $64,718 to $66,335 for 2009. This is a summary of the major changes for 2009.

Free samples can be a great benefit when you want to try a product without having to spend any money for it. I have tried samples of everything from shaving cream and mouthwash to ice cream and pizza. This method of advertising usually benefits the customer and the merchant when one saves money and the other gains word of mouth advertising. Most of us think that free things should come with no strings attached.

 That is, the word free usually means free. To a lot of us, this means not having to complete a survey, give out personal information or use a credit card to pay for fees attached to the free item. However, a lot of merchants, especially on television and internet ads have taken "no strings attached" out of their vocabularies and use various methods to extract money for the free product.

There is a tremendous amount of stuff advertised on the internet that is offered as a free sample. While the concept is good for the advertiser, the consumer needs to read the fine print and pay special attention to hidden costs that might be associated with the sample. As an example, a lot of free samples require the consumer to pay shipping and handling with a credit card.

When you order a sample of anything, the only information that should be given is your name and address. Some companies want an e-mail address and whether you give it is entirely up to you. Personally, I keep one e-mail address for all junk offers and periodically empty it without wasting time reading the messages. 

Credit card information and social security numbers should never be given out for a free sample of anything. Free samples allow the seller to begin building a relationship with buyers who are interested in his product, and who in time can be converted into loyal long term customers. But some advertisers put conditions on the free sample.

Some of those might be:

1. A trial period: In most cases, the trial period starts when the product is ordered. Not when it is received. If the product has a ten day cancellation period and you receive it eight days after you order it, you may only have two days in which to cancel.

2. Limited cancellation time. Sometimes, if the account is not cancelled within the trial period, the product will be shipped and a charge made on the credit card.

3. Sometimes more product is shipped within few days of the initial order and a charge put on the credit card. Then more will be shipped and charged to your card every few days.

4. Cancellation of an account may be difficult. You have to cancel by calling a phone number that gets no answer. And while you are trying to cancel the account, more product may be shipped and charged to your credit card.

These practices are not entirely illegal. All a company has to do is to disclose the conditions attached to the free sample. Usually with small print or hidden somewhere on the order page. There are many products that are offered as free samples by a company until a number of complaints are filed.

 Then they conveniently go out of business and begin operations under another name. Before you order a free sample, it is a good idea to check with the better business bureau or the state attorney general's office to find out if the company has any complaints filed. Another option is to do an internet search for the product or company name and scam.

There are a lot of good free samples available. Everything from arcade games to zaytoven kits and everything in between. When you order a free sample, the advertiser or seller has your shipping address and contact email address which can be used to develop a relationship with you.

 Now the fun part begins, the company begins to educate you about their product and hopefully in time will turn you into a loyal customer. Free samples can be a good thing, but you have to be careful, read the fine print and make sure that you don't sign up for more than a free sample.

Ingredients:

• 1 c dry stuffing
• 1 medium apple peeled, cored and cut into cubes
• 1/4 c shredded carrots
• 1/2 c Chicken Broth
• Salt & Pepper
• 1 Whole uncooked chicken, rinsed and patted down.
• 2 Tbs Extra virgin olive oil
• 1 tsp Paprika
• 1 to 1/2 tsp Garlic Powder
• 1/2 tsp Pepper
• 1/4 tsp Sea Salt

Directions:

1. In a bowl, combine the first four ingredients.
2. Add chicken broth at room temperature slowly to moisten.
3. Salt and pepper to taste.
4. Set aside uncooked.
5. Preheat oven to 450 degrees.Combine Paprika, garlic powder, pepper in salt in a small bowl.
6. Drizzle olive oil over chicken, gently rubbing to distribute over skin, in the cavity, and under the skin.
7. Rub 1/2 seasoning mix over chicken and inside cavity and the other half between the skin and meat.
8. Place chicken in a roasting pan. (casserole dish works just fine as well.) Spoon stuffing in cavity making sure it's lightly packed.
9. Cook chicken uncovered for 15 minutes.Immediately lower heat to 350 degrees.
10. Cook 20 minutes per pound.Use chicken drippings to lightly baste, and rotate pan as needed for uniform browning.
11. Cool for at lest 15 minutes to allow the juices to collect in the meat.

This is a quick and easy recipe. I was eating some pasta salad at someone's house one night and it tasted all right but come to find out it came out of a box. About a week went by, I decided I was going to try to make pasta salad homemade. Trying to think of all the flavors that I would like in a pasta salad and I came up with this recipe.

 It is good for cookouts and bar-b-cue's. It is a good recipe if you need a side dish and you don't like potato salad. Me, I prefer not eating the same foods every time I eat. If you're like me, you like diversity when cooking. It can get tiresome eating the same foods over and over again.

Ingredients

- 16 oz package of shell noodles or vegetable noodles
- 1 package of bacon bits
- 1 medium onion (diced)
- 1 can of peas
- 1-2 bottles of ranch dressing or pepper corn ranch dressing

Instructions

Cook shell noodles according to directions on package then strain. Then put them in large bowl and chill in the refrigerator. Then add your package of bacon bits, onions, peas, and your choice of ranch dressing to your desired taste. If you like, you could chop some green onions and add them to the mixture for color. Chill in refrigerator. Then serve. It will be a good change of pace. I hope you enjoy this recipe and I hope this will take the place of the those box meals.
